Vegetable Oil– To replace the fat found in dairy cream, various vegetable oils are used in plant-based alternatives. These include rapeseed oil, palm oil (see below), sunflower oil and others. There are different ways to sweeten the whipped cream. You could either add powdered sugar, which works pretty well. Start by adding 1/4 cup and then adjust the amount of sugar to your personal liking. Just add more if you want it to be sweeter. When you remove your can of coconut milk from the fridge, be careful not to shake it. The cream should all be at the top of the can and it should be hardened. Carefully scoop out the hard part and leave the watery part at the bottom of the can behind.

Step one is making sure you have enough fat content. Step two is making sure that your cream doesn’t separate very much. Another soy-based single cream option from organic and plant-based food maker Provamel (who’ve been going since 1983!). This is also a very good replacement for standard dairy single cream, though contains a little more fat (albeit unsaturated) than some of those mentioned above. Fold it Together. In a large bowl, toss together all the fruit except the mandarin oranges (because they fall apart easily) and 1-2 tablespoons of toasted coconut (which will be a topping). NUTS: To add a delightful crunch, you can sprinkle thinly sliced almonds or any other type of chopped nut on top of the cake. If there is a dessert with angel food cake involved, count me in. I’ve loved it since the beginning of time. Place the second cake on top. Spread the remaining whipped cream on. Top with maraschino cherries and chocolate shavings if desired.
